Aus dem Lachs (Schweinerücken) als zentrales Kotelettstück des Schweins wird ein sehr magerer, Vitamin B1 reicher Schinken hergestellt, der mit einer dünnen Speckschicht ummantelt ist. Das Fleisch wird anschließend leicht gepökelt und geräuchert, so dass ein geschmacklich mildes Aroma entsteht. Der Schinken eignet sich als zarter, feiner Brotbelag und ist bei allen beliebt, die es eher mild statt kräftig mögen.
