Der zarte und fettarme Schweinelachs wird aus dem Kotelettstrang ausgelöst. Das knochenfreie Fleisch wird durch Pökeln und leichtes Räuchern zu einem sehr fettarmen und trotzdem würzigen Bratenstück. Kasseler Lachsbraten zeichnet sich durch kurze Garzeiten aus. Besonders fein schmeckt er zu Kartoffelpüree und Sauerkraut als herzhaftes Hauptgericht.
