Unser Kalbsgulasch aus der Hüfte ist wunderbar zart und saftig. Als Gulasch oder Geschnetzeltes ist dieses Kalbfleisch ein Highlight. Wir haben einmal einen schönen Vergleich gehört: Kalbsgulasch verhielte sich zum Rindsgulasch etwa so wie ein Seidenschal zum Wollschall. Wir fanden das recht treffend. Beide haben natürlich ihre Berechtigung, Kalb ist aber doch etwas Besonderes nochmal deutlich Feiner als Rind und nicht alltäglich.
