Diese feste, grobkörnige Rohwurst hat ihren Ursprung in Spanien und Portugal. Sie wird nur aus grob gekörntem Schweinefleisch hergestellt, das mit Knoblauch und reichlich Paprika gewürzt wird. Ihren markanten Geschmack erhält die Wurst durch eine mehrwöchige spezielle Art der Lufttrocknung. Sie eignet sich dünn aufgeschnitten als pikanter Brotbelag oder bissfeste Zugabe für ein Baguette.
